Huli(Sambar)
Ingredients:
- Cooked toor dal - 2 cups
- Tamarind water - 1/2 cup
- sambar Masala - 1 tbsp
- sugar/jaggery - 1 to 2 tbsp(optional)
- Salt to taste
- cilantro(chopped) - 1/4 cup
Vegetables that can be used:
- Potatoes and tomatoes
- Green beans and tomatoes
- okra and tomatoes
- Squash and tomatoes
- Muli(radish) and tomatoes
Preparation:
Cut the vegetables and keep it aside. Heat the oil in a pan and ad mustards to it. After they stop popping add hing, turmeric and then add cut vegetables.Add little bit of water. Allow them to cook. Once they are cooked, add cooked toor dal, tamarind water, masala pudi, and salt. If you like, you can add jaggery. Allow it to boil vigorously.
The same recipe follows for leafy vegetables too. But for these sugar is omitted.
